Not to sure which files I need to delete in order to update my drivers.
Does anyone know which ones they are?

I never delete my old drivers first. I just install the new ones over top. You can got to Add/Remove programs in your control panel and uninstall them if you wish.

And by installing over top there won't be any conflicts?

The installation notes just say to not use a download accelerator DLing them, and to disabled your AV software before installing them. However, they do offer this caveat in the XP section:

Installation Notes

Windows XP users must install Service Pack 1 prior to attempting to install this package. Failure to do so will result in the inability to support USB 2.0.
Audio drivers will not install on the following nForce2 products: Chaintech 7NJS. Please use the drivers that come with these products to enable audio functionality

I don't remember which OS you have, but if they say no more than that, disable Norton, and forge ahead.
